METHOD • Portion the meat into 130g balls and press with the TOD 130 press to make consistent sized truffles. • Add 5% of the Marinade to the mushrooms and mix well. • Add 5% of the Marinade to the Sauce and mix well. • Spoon 1 tablespoon of the Sauce mixture into the truffle. • Top with mushrooms. • Drizzle with more Sauce (optional). • Garnish with kale. COOKING GUIDE • Oven bake at 180°C for 25-30 mins.
